Irish Soda Bread

Equipment

  • Stand Mixer fitted with dough hook attachment
  • Pastry Blender
  • 8" cake pan

Ingredients

  • 2 cups flour
  • 2 tbsp sugar
  • 1.5 tsp baking power
  • .5 tsp baking soda
  • .5 tsp salt
  • 1/4 cup butter (plus extra to grease pan)
  • .5-1 cup raisin (add to your preference)
  • 2 tsp caraway seeds
  • 1 egg beaten
  • 2/3 cup buttermilk
  • 2 tbsp milk

Instructions

  • Preheat oven to 375 degrees.
  • Combine flour, sugar, baking powder, baking soda and salt into a bowl.
  • Using a pastry blender cut the butter into the flour mixture until it becomes a cornmeal like consistency.
  • Add the flour mixture to a bowl fitted with a dough hook attachment.
  • Add raisins and caraway seeds and start the mixer on low.
  • Add the beaten egg and buttermilk and continue mixing until the dough pulls away from the sides of the bowl and forms a ball.
  • Grease an 8" cake pan with butter and press the dough evenly into the pan.
  • Cut a "cross" into the dough using a butter knife and brush the top with milk.
  • Bake at 375 for 35-40 minutes until golden brown on top.
